Burrito bowls have recently become a staple in the Gibson/Goodman diet. They are delish and the leftover components make a killer lunch. The core ingredients of my burrito bowls are:
- Cilantro Lime Rice (rinse rice x2, combine ingredients, bring to a boil, reduce heat to low, cover and cook approx. 20 min, until rice is fluffy)
- 1 cup rice
- 2 cups chicken stock
- 1/2 cup cilantro
- 1 lime, juiced
- Fajita Vegetables (heat 1 tbsp olive oil in a skillet on high, add vegetables saute until tender. I like to let mine char on the edges)
- 1 red bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- Corn Salsa (combine ingredients, let sit 30 min)
- 1 cup corn
- 1 jalapeno, finely chopped
- 1/2 cup cilantro, finely chopped
- 1/2 red onion, finely chopped
- 1 lime, juiced
- Grilled chicken (let marinate 1 hour to overnight, grill on medium-high until chicken is cooked through, let rest before dicing)
- 1 large chicken breast, marinated in:
- 2 tbs olive oil
- 2 cloves garlic, finely chopped
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/2 tsp salt & pepper
- 1 large chicken breast, marinated in:
- Avocado
- Cotija
These quantities typically make enough for 3ish burrito bowls, depending on how hungry your eaters are.
