Build a Bowl: Mix and Match Elements for the Perfect Burrito Bowl

Burrito bowls have recently become a staple in the Gibson/Goodman diet. They are delish and the leftover components make a killer lunch. The core ingredients of my burrito bowls are:

  • Cilantro Lime Rice (rinse rice x2, combine ingredients, bring to a boil, reduce heat to low, cover and cook approx. 20 min, until rice is fluffy)
    • 1 cup rice
    • 2 cups chicken stock
    • 1/2 cup cilantro
    • 1 lime, juiced
  • Fajita Vegetables (heat 1 tbsp olive oil in a skillet on high, add vegetables saute until tender. I like to let mine char on the edges)
    • 1 red bell pepper, thinly sliced
    • 1/2 red onion, thinly sliced
  • Corn Salsa (combine ingredients, let sit 30 min)
    • 1 cup corn
    • 1 jalapeno, finely chopped
    • 1/2 cup cilantro, finely chopped
    • 1/2 red onion, finely chopped
    • 1 lime, juiced
  • Grilled chicken (let marinate 1 hour to overnight, grill on medium-high until chicken is cooked through, let rest before dicing)
    • 1 large chicken breast, marinated in:
      • 2 tbs olive oil
      • 2 cloves garlic, finely chopped
      • 1/2 tsp chili powder
      • 1/2 tsp paprika
      • 1/4 tsp cumin
      • 1/2 tsp salt & pepper
  • Avocado
  • Cotija

These quantities typically make enough for 3ish burrito bowls, depending on how hungry your eaters are.
