Asian Chicken Stir-Fry with Green Beans and Water Chestnuts

I love making stir-frys because they are light on the carbs, full or flavor and pack great for lunches. While mine are certainly not traditional, they are always tasty. For this one, I left the green beans a little crunchy so that they would reheat well without becoming mushy.

2tbsp olive oil

2 cloves garlic

2 chicken breasts diced 

1 small onion, chopped

1 small can water chestnuts

1/4 cup hoisin
1/4 soy sauce 

1/8 honey 

Salt and pepper 

Red chili flakes 

2 cups green beans

Heat olive oil in a large sauté pan, add garlic and chicken. Sauté for approx 5 min until chicken is brown on all sides. Add onions, stir constantly until onions are tender. Add water chestnuts, soy sauce, hoisin, honey, salt, pepper, and chili flakes. Reduce heat to low, add green beans. Cover and let simmer until sauce has thickened and green beans are tender, but still have a little crunch.
