A Taste of Summer: Grilled Honey Chipotle Pork Kebabs

Today’s blue skies after a rainy (for San Diego) week inspired me to hit the grill and cook up something summery for lunches this week. I decided on honey chipotle marinated grilled pork loin kebabs with bell peppers and onions.

I originally came across this marinade when making wings for a super bowl party, but I’ve found its the perfect sweet, spicy, smokey combination for lots of other proteins.

  • 2lbs pork loin chops
  • 2 bell peppers, cut into 1-inch squares
  • 1 red onion, cut into 1-inch squares

Honey Chipotle Marinade/Glaze
(adapted from Epicurious recipe)

  • 1 cup honey
  • 3 chipotle chiles in adobo
  • 1 tablespoons Dijon mustard
  • 2 tablespoons ancho chile powder
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons canola oil
  • 2 cloves garlic

Combine ingredients and puree until smooth (I use an immersion blender and it works perfectly!). Cut pork loin into 1-inch cubes, marinate for at least 3 hours. Skewer peppers, onions and pork, alternating until all ingredients are used. Place skewers on a hot grill, cook for 5 minutes, flip, cook for another 5. Let rest, remove from skewers, and enjoy!
